Our story
Born from the heart of Tuscany, Florence, chef Matteo Sassi brings over two decades of pastry, gelato and chocolate making experience from across the globe to Florence Gelato.
Matteo commenced his culinary journey as a 14-year-old apprentice and completed his professional training in Italy’s CAST Alimenti Culinary Academy. After years of experience abroad, Matteo made Australia his second home where he worked as the Head Pastry Chef at Zumbo Patisserie in Sydney before moving to the nation’s capital as the Head Pastry Chef at Sonoma Bakery.
With a passion for showcasing the finest in pastry, Matteo competed and placed third in the Savour Patissier of the Year competition in 2016 and the Australian selection for World Chocolate Master competition in 2014.
Matteo brings his passion and the classic flavours of his hometown together with Australia’s freshest and finest ingredients to create Florence Gelato.
